Chicken With Potato Stuffing

Ingredients

bulk Italian sausage

onion, chopped
|
|

cups |
hot mashed potatoes
|
|
1-1/2 |
cups |
dried soft bread crumbs
|
|
1/2 |
cup |
peaches, chopped
|
|
1 |
teaspoon |
dried oregano
|
|
3/4 |
teaspoon |
salt
|
|
1/8 |
teaspoon |
pepper
|
|
1 |
|
egg
|
|
3-1/2 |
lb. |
broiling chicken
|
|
Directions:
Cook sausage and onion in large skillet over medium heat, stirring frequently, until sausage is brown.
Drain sausage and remove from heat. Stir in remaining ingredients, except chicken. Fill body cavities
of chicken with stuffing, allowing some for spill over.
Place chicken, breast side up, in shallow baking
pan. Roast in 375 degree oven for 1- 1/2 hours or until meat juices run clear.
