Red Potato Salad
Yield: 4-6 servings
Ingredients
1/4 |
cup |
mayonnaise

1/4 |
cup |
sour cream
|
|

medium red potatoes, cooked and cubed
|
|
1/4 |
cup |
shredded cheddar cheese
|
|
2 |
tablespoons |
chopped red onion
|
|
1 |
strip |
bacon, cooked and crumbled
|
|
1 1/2 |
teaspoons |
snipped chives
|
|
|
|
salt to taste
|
|
|
|
pepper to taste
|
|
Directions:
In small bowl, mix together mayonnaise and sour cream and set aside.
In a large bowl, combine potatoes, shredded cheese, onion, bacon and chives. Gently blend in mayonnaise/sour cream mixture. Salt and pepper to taste and refrigerate for at least 2 hours to blend flavors before serving.
