Salsa Potato Salad
Yield: 7 servings
Ingredients
1/3 |

mayonnaise

sour cream
|
|
1/4 |
cup |
salsa
|
|
1 |
tablespoon |
minced, fresh parsley
|
|
3 |
cups |
potatoes, cooked and unpeeled
|
|
1 |
|
celery stalk, thinly sliced
|
|
1/4 |
cup |
onion, chopped
|
|
1/2 |
cup |
cheddar cheese, shredded
|
|
Directions:
In a bowl, combine the mayonnaise, sour cream, salsa and parsley.
In a large bowl, combine the potatoes, celery and onion. Add dressing and toss to coat. Stir in cheese.
Cover and refrigerate for at least 1 hour to blend flavors before serving.
