Sweet Potato Fruit Salad
Yield: Makes 8 (1/2 cup) servings
Ingredients

cups |
cubed cooked sweet potatoes

1/4 |
cup |
chopped dates or raisins
|
|
1 |
|
banana, sliced
|
|
1 |
can |
(8 oz.) pineapple chunks, drained, reserving liquid
|
|
|
1/4 |
cup |
light mayonnaise or light salad dressing
|
|
2 |
tablespoons |
reduced fat peanut butter
|
|
2 |
tablespoons |
pineapple juice, reserved
|
|
1/4 |
teaspoon |
hot pepper sauce
|
|
Directions:
In large bowl, combine all salad ingredients, mix gently. In small bowl, combine all dressing ingredients, blend well. Pour over salad, mix gently.
